5Small Yukon Gold Potatoes
1/2can Old El Paso™ Refried Beans
2tablespoons Old El Paso™ taco seasoning mix
1/2cup Guacamole
1/2cup Sour Cream
1/4Cup Tomatoes, diced
1/4Cup Black Olives, diced
1/4Cup Green Onions, diced
2/3Cup Colby Jack Cheese, shredded
Extra Virgin Olive Oil Spray
Salt & Pepper to Taste


Step 1 Pierce each potato with a knife. Bake in the oven at 400°F for about one hour, directly on the oven rack.

Step 2 Cut potatoes in half. Scoop out most of the flesh from each potato half, making a boat.

Step 3 Brush both sides of each potato skin with extra virgin olive oil. Season with salt and pepper.

Step 4 Set the oven to broil. Broil the potatoes with the skin side up for about 2-3 minutes. Remove from the oven, flip over, and broil again for 2-3 minutes.

Step 5 Stir the taco seasoning into the refried beans.

Step 6 Layer potato skins with 1/2 Tablespoons refried beans, 1/2 Tablespoon guacamole, 1/2 Tablespoon sour cream.
