Open-Faced-Mediterranean-Lamb-BurgerMade with the unique combination of Greek Yogurt, pistachios, and cilantro, this creamy addition does something special for the palate.

Ingredients :

  • 1.5 lbs ground lamb
  • (1 T minced garlic, 1⁄2 t cumin)
  • (1⁄2 t ground coriander, 1⁄4 t pepper, 1⁄4 t salt)
  • 1 T minced fresh mint
  • 1 T minced fresh parsley
  • 1 pkg whole wheat pita rounds
  • 1 cucumber, thinly sliced
  • 1⁄4 c chopped pistachios
  • 2 c Greek-style yogurt
  • 2/3 c peeled, seeded, and diced cucumber
  • 1⁄4 c chopped pistachios
  • 1 T minced fresh cilantro
  • (1⁄2 t salt, 1⁄4 t ground red pepper)

Preparation :

  • Combine lamb, garlic, cumin, coriander, pepper, salt, mint and parsley. Shape mixture into 4 patties. Grill patties over med-high heat, for 6 minutes per side, or until internal temperature reaches the desired temperature. Medium-Rare 145 F; Medium 160 F; Well-Done 170 F

     

  • To make sauce: Combine yogurt, diced cucumber, 1⁄4 c pistachios, cilantro, salt and red pepper.

     

  • Cover and chill up to 2 days. Spread desired amount of cucumber sauce over pitas. Top with lamb patty. Garnish with sliced cucumber and remaining 1⁄4 c chopped pistachios.
