INGREDIENTS
  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, chopped
  • 8 oz cream cheese, softened
  • 1 1/2 cup parmesan, grated
  • 8 oz. sour cream
  • 10 oz. frozen spinach, defrosted, drained, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup mozarella, shredded
INSTRUCTIONS
  1. preheat oven to 350 degrees F
  2. heat olive oil in a skillet over medium heat
  3. add onion to skillet and cook for 3-4 minutes until softened
  4. place bell pepper into pan and cook until just softened
  5. add garlic and cook for 30 seconds to 1 minute, then remove the skillet from the heat and set aside
  6. beat cream cheese, parmesan, sour cream together until smooth
  7. add in the thawed spinach, onion bell pepper mixture, 1/2 cup mozarella and salt and pepper and stir
  8. grease a 3 to 4 quart casserole dish with cooking spray and add the cheese mixture
  9. spread into an even layer and top with remaining mozarella
  10. place in oven and bake for 25 to 30 minutes
  11. remove and serve with bread or crackers for dipping
