Throw out that brownie mix!

That’s right, you heard me! Throw. It. Out. While a brownie mix may do well in a pinch, from-scratch brownies are more than just a brownie mix with a few extra ingredients added. When I was younger, from-scratch brownies seemed like the most time-consuming dessert, but you really can throw them together almost as quickly as a pre-made brownie mix! The end result tastes a whole lot better, too.


Melt the chocolate.

While some from-scratch brownies require a lot of cocoa, we use a little shortcut for ours – chocolate chips! While your oven is preheating to 350 F, melt 1 1/2 cups chocolate chips and 1/2 cup butter in the microwave in 30 second intervals, whisking until smooth.


Add in eggs and dry ingredients.

Once your chocolate has melted, stir in 3 large eggs and mix until completely combined. You will want to do this step by hand – brownies that are overmixed tend to be more flat. We prefer just using a simple wooden spoon – it does the trick every time. Add in 1 1/4 cups flour, 1 cup sugar, 1/4 teaspoon baking soda, and 1 teaspoon vanilla extract. Stir together until just combined. As before, be careful to not overmix – just stir by hand. Spread batter into a greased 9×13″ baking dish.


Add toppings.

The most popular brownies we make – hands down – are chocolate, caramel, walnut brownies. We’re not sure why that’s the magical combination, but everyone who tastes them always asks for the recipe. Chop 1 cup of walnuts in a food chopper and sprinkle them over the batter. Sprinkle an additional 1 1/2 cups chocolate chips over the top of the nuts. Bake for 30-35 minutes, until set.


Drizzle with caramel and serve!

The crowning jewel of these brownies is the warm drizzled caramel on top. Before you start to worry about making caramel from scratch, relax! We use a quick trick for this one, too! 😉 In a microwaveable bowl with a pour spout, add 20 unwrapped baking caramels and 1 1/2 Tablespoons milk. Microwave for about 1 minute, remove and whisk. Return to the microwave in 15 second intervals, whisking in between, until the caramel is completely melted and smooth. Pour directly over warm brownies, then slice into squares and serve. We like ours best with a large helping of vanilla ice cream.
